  • 1 pound Sausage (ground or links, casing removed)

  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and dice them into small 1/2-inch cubes. Place the cubed potatoes in a bowl of cold water to prevent browning and remove excess starch.

Step 2

Dice the onion and bell peppers into small pieces. Mince the garlic if not already prepared.

Step 3

In a large skillet or cast-iron pan, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook until browned and fully cooked through, breaking it apart into crumbles with a wooden spoon as it cooks. Once cooked, remove the sausage from the skillet and set aside on a plate.
