Ingredients

  • 2 pieces (10-12 oz each) ribeye or New York strip steaks
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 0.5 cup unsalted butter
  • 0.25 cup crumbled bleu cheese
  • 2 cloves garlic cloves, minced
  • 1 tablespoon parsley, chopped
  • 1 teaspoon lemon juice

Directions

Step 1

Bring the steaks to room temperature by setting them out on the counter for 30 minutes before cooking.

Step 2

Brush both sides of the steaks with olive oil, then season evenly with kosher salt, black pepper, and garlic powder. Set aside while you prepare the bleu cheese garlic butter.

Step 3

In a small bowl, mix together the unsalted butter, crumbled bleu cheese, minced garlic, parsley, and lemon juice until well combined. Place the mixture onto a piece of plastic wrap, roll into a log, and refrigerate until firm (about 10-15 minutes).

Step 4

Preheat your grill to medium-high heat (about 400-450°F). Lightly oil the grill grates to prevent sticking.

Step 5

Place the steaks onto the hot grill and cook for 4-5 minutes per side for medium-rare, or until they reach your desired level of doneness. Use a meat thermometer to check: 130°F for medium-rare, 140°F for medium, and 150°F for medium-well.

Step 6

Remove the steaks from the grill and let them rest for 5 minutes on a cutting board, loosely tented with foil to retain heat.

Step 7

While the steaks rest, slice the chilled bleu cheese garlic butter into rounds.

Step 8

Top each steak with one or two rounds of the bleu cheese garlic butter before serving. Let the butter melt over the steaks for added flavor.

Step 9

Serve immediately with your favorite side dishes, such as roasted vegetables or mashed potatoes.
