Ingredients

  • 4 large eggs
  • 2 tablespoons heavy cream
  • 1 tablespoon unsalted butter
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons ground paprika
  • 0.25 cups cheddar cheese, shredded
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon scallions, finely sliced

Directions

Step 1

Crack the eggs into a mixing bowl. Add the heavy cream, salt, black pepper, and paprika. Whisk thoroughly until the mixture is evenly combined and slightly frothy.

Step 2

Heat a nonstick skillet over medium-low heat. Add the butter and let it melt, coating the bottom of the pan.

Step 3

Pour the egg mixture into the skillet. Allow it to sit undisturbed for about 30 seconds to let the edges set slightly.

Step 4

Using a spatula, gently stir the eggs, scraping along the bottom of the skillet. Continue to cook over low heat, stirring gently to create soft curds.

Step 5

When the eggs are about 75% cooked but still creamy, sprinkle the shredded cheddar cheese over the top. Stir gently to incorporate the cheese into the eggs.

Step 6

Once the eggs are fully cooked but still moist and tender, remove them from the heat immediately to prevent overcooking.

Step 7

Garnish with chopped parsley and sliced scallions. Serve immediately with your favorite toast or side.
