Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 2 tablespoons unsalted butter
  • 1 small yellow onion
  • 2 garlic cloves
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 0.25 teaspoon ground cinnamon
  • 0.5 cup dried apricots
  • 0.25 cup golden raisins
  • 0.25 cup slivered almonds
  • 0.5 cup chicken or vegetable broth
  • 2 tablespoons fresh cilantro (optional, for garnish)
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Set aside.

Step 2

Finely chop the yellow onion and mince the garlic cloves. Dice the dried apricots into small pieces.

Step 3

In a medium saucepan, heat the unsalted butter over medium heat until melted.

Step 4

Add the chopped onion to the pan and sauté for 3-4 minutes until translucent.

Step 5

Stir in the minced garlic, curry powder, ground cumin, and ground cinnamon, cooking for an additional minute until the spices are fragrant.

Step 6

Add the rinsed rice to the pan and stir well to coat the grains with the buttery spice mixture.

Step 7

Pour in the water and broth, then add the salt and black pepper. Stir to combine.

Step 8

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the saucepan and let the rice cook for 15 minutes, undisturbed.

Step 9

After 15 minutes, uncover the saucepan and gently fold in the diced dried apricots, golden raisins, and slivered almonds.

Step 10

Re-cover the saucepan and allow the rice to steam for an additional 5 minutes off the heat, letting the flavors meld together.

Step 11

Fluff the rice with a fork and transfer it to a serving dish.

Step 12

Optionally, garnish with freshly chopped cilantro for a burst of color and freshness.

Step 13

Serve warm as a flavorful side dish or light main!
