  • 2 pounds beef chuck roast
  • 0.5 cup soy sauce
  • 0.25 cup hoisin sauce
  • 0.75 cup beef broth
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 4 stalks green onions, sliced (white and green parts separated)
  • 2 cups carrots, sliced into rounds
  • 1 large red bell pepper, sliced
  • 2 tablespoons cornstarch
  • 0.25 cup water
  • 2 teaspoons sesame seeds (optional)
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Season the beef chuck roast with salt and black pepper on all sides.

Step 2

Heat a large skillet over medium-high heat and sear the beef for 2-3 minutes per side until browned. Transfer the beef to the crock pot.

Step 3

In a medium bowl, whisk together soy sauce, hoisin sauce, beef broth, brown sugar, rice vinegar, sesame oil, minced garlic, and minced ginger.
