Ingredients

  • 4 pieces chicken breasts (boneless, skinless)
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 large green bell pepper
  • 1 medium onion
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup chicken broth
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Slice the red, yellow, and green bell peppers into thin strips. Peel and slice the onion into thin wedges.

Step 2

Place the chicken breasts on a cutting board and season both sides with paprika, garlic powder, dried oregano, salt, and black pepper.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes per side, until golden brown. Remove the chicken and set aside on a plate.

Step 4

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the sliced bell peppers and onion to the pan and sauté for 5-6 minutes, stirring occasionally, until softened.

Step 5

Return the chicken breasts to the skillet, nestling them among the cooked peppers. Pour in the chicken broth and balsamic vinegar, scraping the bottom of the pan to deglaze and incorporate any browned bits.

Step 6

Cover the skillet with a lid and allow the chicken to cook through, about 12-15 minutes, or until the internal temperature reaches 165°F (74°C).

Step 7

Taste the sauce and adjust seasoning with additional salt or pepper if needed.

Step 8

Remove the skillet from heat and garnish with chopped fresh parsley before serving.

Step 9

Serve hot with rice, mashed potatoes, or crusty bread to soak up the flavorful sauce.
