Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Place the chicken breasts on a cutting board and pound them lightly with a meat mallet (or the back of a skillet) to ensure even thickness.

Step 2

Season both sides of the chicken with salt, black pepper, paprika, cumin, and oregano. Set aside.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Once hot, add the chicken breasts and sear for 4-5 minutes per side or until golden brown. Remove the chicken from the skillet and set aside on a plate.

In the same skillet, reduce the heat to medium and add 1 tablespoon of butter. Allow it to melt, then add the chopped onion.
