Ingredients

  • 2 pieces Chicken breasts (boneless, skinless)
  • 0.5 cups All-purpose flour
  • 1 teaspoons Salt
  • 1 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 3 cloves Garlic (minced)
  • 0.5 cups Chicken broth
  • 0.5 cups Dry white wine
  • 0.25 cups Lemon juice (freshly squeezed)
  • 2 tablespoons Capers (drained and rinsed)
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Place the chicken breasts on a cutting board and slice each breast horizontally into two thin cutlets. Pound them gently with a meat mallet to even thickness if necessary.

Step 2

In a shallow dish, combine the flour, salt, and black pepper.

Step 3

Dredge each chicken cutlet in the flour mixture, coating both sides, and shake off any excess flour. Set the coated chicken pieces aside on a clean plate.

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and the oil is shimmering.
