Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt (for biscuits)
  • 0.5 cup unsalted butter (cold and cubed)
  • 0.75 cup buttermilk
  • 1 pound chicken breast (boneless, skinless)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.75 teaspoon salt (for chicken)
  • 0.5 teaspoon black pepper
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 1 tablespoon all-purpose flour (for sauce)
  • 1 tablespoon chopped fresh parsley (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 3

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until it resembles coarse crumbs.

Step 4

Pour the buttermilk into the flour mixture and gently stir until the dough comes together. Be careful not to overmix.

Step 5

Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1 inch thick. Fold the dough over itself 2–3 times to create layers, then pat it out again to 1 inch thickness.

Step 6

Using a biscuit cutter or the rim of a glass, cut out biscuits and place them onto the prepared baking sheet. Bake for 12–15 minutes or until golden brown. Remove and set aside.

Step 7

While the biscuits bake, season the chicken breast with garlic powder, onion powder, paprika, salt, and black pepper.

Step 8

Heat olive oil in a large skillet over medium heat. Cook the chicken breast for 6–7 minutes per side, or until golden and fully cooked. Remove the chicken from the skillet and let it rest for 5 minutes before shredding or slicing.

Step 9

In the same skillet, reduce the heat to medium-low. Add the all-purpose flour and stir for 1 minute. Slowly whisk in the chicken broth, ensuring no lumps form.

Step 10

Add the heavy cream to the skillet and stir until the sauce thickens, about 2–3 minutes.

Step 11

Return the shredded or sliced chicken to the skillet and toss to coat in the creamy sauce. Stir in the chopped parsley, if using.

Step 12

To assemble, split the warm biscuits in half and generously spoon the chicken and sauce onto the bottom half. Place the top half of the biscuit back on to create a sandwich.

Step 13

Serve immediately and enjoy your savory chicken biscuits!
