Ingredients

  • 300 grams Fresh spinach
  • 2 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 250 milliliters Whole milk
  • 150 grams Cheddar cheese, grated
  • 50 grams Parmesan cheese, grated
  • 3 Eggs
  • 1 teaspoon Garlic powder
  • 0.25 teaspoons Nutmeg, freshly grated (optional)
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper, freshly ground
  • 2 tablespoons Breadcrumbs (optional for topping)

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease an 8x8-inch baking dish.

Step 2

Rinse the spinach under cold water, remove any tough stems, and roughly chop it. Place the spinach in a large skillet over medium heat and cook, stirring occasionally, until wilted. This should take about 2-3 minutes. Remove from heat and drain any excess liquid.

Step 3

In a medium-sized saucepan, melt the butter over medium heat. Stir in the all-purpose flour and cook for 1-2 minutes, stirring continuously, to make a roux.

Step 4

Gradually whisk in the milk and continue cooking, whisking constantly, until the mixture thickens and forms a smooth sauce (about 3-4 minutes).

Step 5

Remove the saucepan from the heat and stir in the grated cheddar cheese and Parmesan cheese. Add the garlic powder, nutmeg (if using), salt, and black pepper. Mix until the cheese is fully melted and blended into the sauce.

Step 6

In a large mixing bowl, beat the eggs lightly. Gradually add the cheese sauce to the eggs, stirring constantly to prevent scrambling.

Step 7

Add the cooked spinach to the mixture and stir until fully combined.

Step 8

Pour the mixture into the prepared baking dish, spreading it out evenly. If desired, sprinkle breadcrumbs over the top for added texture.

Step 9

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the squares are set.

Step 10

Remove from the oven and let cool for 10 minutes before cutting into squares and serving.
