Ingredients

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.75 cup Cheddar cheese, shredded
  • 0.5 cup Dried cranberries
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 tablespoon Fresh thyme leaves, finely chopped
  • 0.5 cup Milk
  • 3 tablespoons Olive oil
  • 1 large Egg

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease or line a 24-cup mini muffin pan with paper liners.

Step 2

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and ground black pepper. Mix well to ensure even distribution.

Step 3

Stir in the shredded cheddar cheese, dried cranberries, chopped parsley, and chopped thyme leaves. Toss the dry ingredients together until the cheese and cranberries are evenly coated in flour.

Step 4

In a separate bowl, whisk together the milk, olive oil, and egg until fully combined.

Step 5

Pour the wet ingredients into the dry ingredients and gently stir with a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are fine.

Step 6

Using a small spoon or cookie scoop, evenly divide the batter into the prepared mini muffin cups, filling each about 3/4 full.

Step 7

Place the muffin pan in the preheated oven and bake for 10-12 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.

Step 8

Remove the pan from the oven and allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. These mini muffins pair well with soups, salads, or as part of a snack platter.
