  • 60 milliliters Cold water

  • 100 grams Cheddar cheese, grated
  • 50 grams Parmesan cheese, grated
  • 2 tablespoons Fresh chives, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 1 Egg yolk
  • 1 tablespoon Water
  • 0.5 teaspoon Black pepper

Directions

Step 1

Place the flour and salt in a large mixing bowl. Add the unsalted butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Slowly add the cold water, mixing with a fork until the dough starts to come together. Avoid overmixing.

Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
