Ingredients

  • 2 large flour tortillas
  • 4 large eggs
  • 2 tablespoons milk
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 bacon strips
  • 1 cup shredded cheddar cheese
  • 1 tablespoon butter
  • 0.5 bell pepper, diced
  • 1 tomato, diced
  • 2 green onion, sliced
  • 1 teaspoon hot sauce (optional)

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.

Step 2

Heat a large non-stick skillet over medium heat and cook the bacon until crispy. Transfer the bacon to a plate lined with paper towels to drain excess grease. Once cooled, crumble the bacon into small pieces.

Step 3

Wipe the skillet with a paper towel. Add the butter and let it melt over medium heat. Pour in the egg mixture and gently scramble until fully cooked but still soft. Remove the scrambled eggs from the skillet and set aside.
