Ingredients

  • 1.5 cups rolled oats
  • 0.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup cooked bacon, crumbled
  • 2 tablespoons chopped fresh chives
  • 0.25 cup unsalted butter, melted
  • 2 pieces large eggs
  • 2 tablespoons honey
  • 0.25 cup plain Greek yogurt

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large bowl, mix together the rolled oats, all-purpose flour, baking powder, salt, and ground black pepper.

Step 3

Stir in the shredded sharp cheddar cheese, cooked bacon crumbles, and chopped fresh chives until evenly distributed.

Step 4

In a separate bowl, whisk together the melted butter, eggs, honey, and plain Greek yogurt until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and mix until just combined. The dough will be thick.

Step 6

Scoop out roughly 2-tablespoon portions of dough and shape them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each ball into a cookie shape.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the cookies are golden brown on the edges and set in the center.

Step 8

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
