Ingredients

  • 4 pieces Blue hake fillets (skinless)
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 3 cloves Garlic (minced)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Fresh thyme (chopped)
  • 1 piece Lemon (juiced)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 0.25 cup White wine (optional)

Directions

Step 1

Pat the blue hake fillets dry with paper towels to remove any excess moisture. Season both sides with salt, black pepper, and paprika, and set aside.

Step 2

Heat the olive oil in a large non-stick skillet over medium-high heat. Once the oil is shimmering, add the fish fillets and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the fillets from the skillet and set aside on a plate.

Step 3

Reduce the heat to medium and add unsalted butter to the same skillet. Allow the butter to melt and begin to foam, then stir in the minced garlic. Cook for about 1 minute until fragrant, being careful not to burn the garlic.

Step 4

Optional: Deglaze the pan with white wine, stirring to scrape up any brown bits from the bottom of the pan, and let it reduce for 1-2 minutes.

Step 5

Add the chopped parsley, chopped thyme, and lemon juice to the skillet. Stir to combine and cook for an additional 30 seconds to 1 minute.

Step 6

Return the blue hake fillets to the skillet, spoon the herb butter sauce over the top, and allow them to warm through for 1-2 minutes.

Step 7

Transfer the fillets to serving plates, drizzle with extra herb butter sauce, and garnish with additional chopped parsley if desired.

Step 8

Serve immediately with your choice of side dishes, such as roasted vegetables, mashed potatoes, or steamed rice.
