Ingredients

  • 2 lbs beef stew meat
  • 0.25 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 4 medium carrots, peeled and chopped
  • 4 medium potatoes, peeled and diced
  • 2 stalks celery stalks, chopped
  • 4 cloves garlic cloves, minced
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 leaf bay leaf
  • 1 cup frozen peas

Directions

Step 1

In a large mixing bowl, combine the flour, salt, and black pepper. Lightly coat the beef stew meat in the seasoned flour mixture.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the coated beef in batches until browned on all sides, about 2-3 minutes per side. Set aside.

Step 3

In the crock pot, add the diced onion, carrots, potatoes, celery, and minced garlic.

Step 4

Add the seared beef on top of the vegetables.

Step 5

In a small bowl, whisk together the tomato paste, beef broth, Worcestershire sauce, dried thyme, and dried rosemary. Pour this mixture over the beef and vegetables in the crock pot.

Step 6

Add the bay leaf for additional flavor.

Step 7

Cover the crock pot with its lid and cook on low heat for 8 hours, or on high heat for 4-5 hours, until the beef is tender and the vegetables are cooked through.

Step 8

During the last 30 minutes of cooking, stir in the frozen peas.

Step 9

Remove and discard the bay leaf. Give the stew a taste and adjust seasoning with extra salt or pepper if needed.

Step 10

Serve the beef stew warm with crusty bread or over rice, if desired.
