Preheat oven to 375°F (190°C).
Pound the beef flank steak to 1/4 inch thickness using a meat mallet.
In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the garlic until fragrant, about 1 minute.
Add the spinach and cook until wilted, about 2 minutes, then remove from heat.
In a mixing bowl, combine the ricotta cheese, Parmesan cheese, cooked spinach, diced roasted red pepper, egg, bread crumbs, and half of the salt, pepper, and Italian seasoning; mix well.
Spread the cheese and spinach mixture evenly over the flattened beef steak.
