Ingredients

  • 500 g Beef chuck, cubed
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 large Carrot, diced
  • 2 cups Beef broth
  • 2 tbsp Tomato paste
  • 2 tbsp Soy sauce
  • 1 tsp Thyme
  • 1 Bay leaf
  • 1 cup Rice
  • 2 cups Water
  • 2 tbsp Parsley, chopped

Directions

Step 1

Season the cubed beef with salt and black pepper.

Step 2

In a large skillet over medium-high heat, add olive oil. Once hot, add the beef cubes and brown all sides. Remove the beef and set aside.

Step 3

In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.

Step 4

Add the diced carrot to the skillet and cook for another 3 minutes.

Step 5

Return the browned beef to the skillet. Stir in the beef broth, tomato paste, soy sauce, thyme, and bay leaf. Bring to a boil.

Step 6

Once boiling, reduce the heat to low. Cover and let simmer for about 40 minutes, or until the beef is tender.

Step 7

Meanwhile, rinse the rice under cold water until the water runs clear. In a separate pot, bring 2 cups of water to a boil. Add the rice, cover, and reduce the heat to low. Cook for about 18 minutes or until the rice is tender and water is absorbed.

Step 8

After the beef is tender, remove the bay leaf and discard. Adjust seasoning with salt and pepper, if necessary.

Step 9

Serve the beef mixture over generous portions of rice. Garnish with freshly chopped parsley before serving.
