Ingredients

  • 1 cup Dried navy beans
  • 4 slices Bacon, chopped
  • 1 medium Onion, finely diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Tomato paste
  • 1 14-ounce can Canned diced tomatoes, with juice
  • 0.25 cup Molasses
  • 2 tablespoons Brown sugar, packed
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Yellow mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cups Water

Directions

Step 1

Rinse and sort the dried navy beans, then place them in a large bowl. Cover with water and soak overnight, or for at least 8 hours.

Drain and rinse the soaked beans. Set them aside.

Preheat your oven to 325°F (160°C).

Step 4

In a large oven-safe pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

Add the diced onion to the pot and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for 1 more minute, until fragrant.

Stir in the tomato paste and cook for 2 minutes to deepen its flavor.

Add the canned diced tomatoes, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, ground cumin, salt, and pepper. Mix well to combine.
