  • 12 slices bacon
  • 2 large yellow onion
  • 4 medium garlic cloves
  • 1 cup brown sugar
  • 1 cup brewed coffee
  • 0.25 cup apple cider vinegar
  • 0.25 cup maple syrup
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon black pepper

Directions

Step 1

Chop the bacon into small pieces, about 1-inch wide.

Step 2

In a large skillet or Dutch oven, cook the bacon over medium heat until it becomes crisp and golden brown, about 10-12 minutes.

Step 3

Using a slotted spoon, transfer the cooked bacon to a paper towel-lined plate to drain. Leave about 1 tablespoon of bacon fat in the skillet, discarding the rest.

While the bacon is cooking, peel and finely chop the onions and garlic.

Add the chopped onions and garlic to the skillet with the bacon fat. Cook over medium heat until the onions become soft and translucent, approximately 8-10 minutes.
