In a large bowl, mix the ground beef with salt and black pepper. Form the mixture into 4 evenly sized patties, slightly larger than the diameter of the buns.
Heat 1 tablespoon of olive oil in a large skillet or grill pan over medium-high heat. Cook the patties for 3-4 minutes on each side, or until they reach desired doneness. Add a slice of cheddar cheese to each patty during the last minute of cooking so it melts slightly.
In another skillet, heat the remaining tablespoon of olive oil over medium heat and grill the pineapple rings for 1-2 minutes per side until lightly caramelized. Remove and set aside.
