  • 0.25 teaspoon ground ginger
  • 0.5 teaspoon salt
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 0.25 cup whole milk
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped pecans or walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or non-stick spray.

Step 2

Wash the sweet potatoes and pierce them with a fork. Roast them in the oven for about 45 minutes, or until they are tender. Allow them to cool, then peel and mash them. You’ll need about 1 cup of sweet potato puree.
