Ingredients

  • 2 medium zucchini
  • 2 whole roasted red peppers

Directions

Step 1

Wash and dry the zucchini. Cut the zucchini into thin slices, about 1/4-inch thick rounds or half-moons depending on your preference.

If using store-bought roasted red peppers, drain them and pat dry. Slice the roasted red peppers into thin strips about 1/2-inch wide.
