Ingredients

  • 4 pieces Veal cutlets
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 3 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 0.25 cup White wine
  • 0.5 cup Chicken stock
  • 1 bunch Broccoli rabe
  • 0.25 teaspoon Crushed red pepper flakes
  • 2 tablespoons Parmesan cheese, grated

Directions

Step 1

Trim any excess fat from the veal cutlets and season both sides with salt and pepper.

Step 2

Dredge the veal cutlets lightly in flour, shaking off any excess.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Step 4

Sear the veal cutlets for 2-3 minutes on each side until golden brown. Remove and set aside.

In the same skillet, lower the heat to medium and add another tablespoon of butter.

Add the minced garlic and sauté for 30 seconds until fragrant.

In another skillet, heat the remaining olive oil and butter over medium heat.
