Ingredients

  • 4 pieces tilapia fillets
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 0.5 cup slivered almonds
  • 0.5 cup dried cherries
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 2 tablespoons fresh parsley

Directions

Step 1

Season both sides of the tilapia fillets with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the tilapia fillets to the skillet and cook for 3-4 minutes on each side, until the fish is golden brown and flakes easily with a fork. Remove the fillets from the skillet and set aside on a plate.

Step 4

In the same skillet, reduce the heat to medium-low and add 1 tablespoon of olive oil and 2 tablespoons of unsalted butter.

Step 5

Stir in the slivered almonds and saute for 2-3 minutes until they are golden and fragrant.

Step 6

Add the dried cherries and stir for another minute, allowing them to slightly soften.

Step 7

Stir in the lemon juice and honey, mixing well to create a light sauce.

Step 8

Return the cooked tilapia fillets to the skillet, spooning some of the almond and cherry mixture over the top. Cook for 1-2 minutes to warm through.

Step 9

Garnish with freshly chopped parsley before serving.

Step 10

Serve immediately with your favorite side, such as rice or steamed vegetables.
