Ingredients

  • 1 bunch Swiss chard
  • 1.5 cups Corn kernels (fresh or frozen)
  • 2 tablespoons Olive oil
  • 2 Garlic cloves, minced
  • 0.5 teaspoons Red chili flakes
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Lemon juice (freshly squeezed)
  • 2 tablespoons Parmesan cheese (optional, grated)

Directions

Step 1

Thoroughly rinse the Swiss chard under cold water to remove any dirt or grit. Pat dry with a clean kitchen towel.

Step 2

Separate the Swiss chard stems from the leaves. Chop the stems into small pieces and roughly chop the leaves into bite-sized pieces. Set them aside in separate piles.

Step 3

If using fresh corn, remove the kernels from the cob. If using frozen corn, thaw and drain any excess liquid.

Step 4

Heat the olive oil in a large skillet over medium heat.

Add the minced garlic and chopped Swiss chard stems to the skillet. Sauté for 2-3 minutes until the stems begin to soften.

Stir in the corn kernels and cook for another 3-4 minutes, allowing the corn to heat through and lightly caramelize.
