Ingredients

  • 500 grams Button mushrooms or cremini mushrooms
  • 3 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 3 Garlic cloves, minced
  • 2 Fresh thyme sprigs
  • 60 ml Dry white wine or beef broth
  • 1 tablespoon Soy sauce
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Wipe the mushrooms clean with a damp paper towel and trim the ends of the stems. Slice them into thick, even slices about 1/4 inch wide.

Step 2

In a large skillet, heat the olive oil and 2 tablespoons of the butter over medium heat until melted and bubbling.

Step 3

Add the sliced mushrooms in a single layer, ensuring they have room to sear. Avoid overcrowding the pan to prevent steaming.

Step 4

Cook the mushrooms undisturbed for about 3-4 minutes to allow them to brown on one side. Stir and flip them, continuing to cook for another 3-4 minutes until they are golden brown and slightly softened.

Step 5

Push the mushrooms to one side of the skillet and add the remaining 1 tablespoon of butter to the empty space. Once the butter melts, add the minced garlic and thyme sprigs. Stir for about 1 minute, just until fragrant.

Step 6

Deglaze the pan by pouring in the white wine or beef broth, scraping up any browned bits stuck to the bottom of the skillet using a wooden spoon. Let it simmer for 2-3 minutes to reduce slightly.

Step 7

Stir in the soy sauce, salt, and ground black pepper, allowing the mushrooms to soak up the flavors. Cook for an additional 1-2 minutes until the liquid is mostly absorbed, leaving a slight glaze on the mushrooms.

Step 8

Remove the thyme sprigs before serving. Serve the sauteed mushrooms hot as a steak topper, burger addition, or as a savory side dish.
