Ingredients

  • 400 grams Fresh spinach
  • 2 tablespoons Oil (vegetable or mustard oil for an authentic flavor)
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Fresh ginger, grated
  • 2 small Green chilies, finely chopped
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Salt
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh cilantro (optional), chopped

Directions

Step 1

Wash the spinach thoroughly to remove any dirt or grit. Drain well and roughly chop the leaves.

Step 2

Heat oil in a large skillet or wok over medium heat.

Step 3

Once the oil is hot, add the cumin seeds and mustard seeds. Allow them to splutter and release their aroma for about 30 seconds.

Step 4

Add the minced garlic, grated ginger, and green chilies to the pan. Sauté for 1-2 minutes until the garlic turns golden and fragrant.

Step 5

Stir in the turmeric powder and ground coriander, mixing well to coat the spices evenly in the oil.

Step 6

Add the chopped spinach to the skillet. Toss gently to combine the spinach with the spice mixture.

Step 7

Season with salt, then cover the pan and let the spinach cook down for 2-3 minutes, stirring occasionally.

Step 8

Once the spinach has wilted and any excess water has evaporated, remove the lid and cook for another 1-2 minutes to allow the flavors to meld.

Step 9

Turn off the heat and squeeze fresh lemon juice over the spinach. Toss to combine.

Step 10

Garnish with freshly chopped cilantro, if desired, and serve hot as a side dish to complement rice, flatbreads, or your favorite curry.
