Ingredients

  • 500 grams sirloin steak
  • 250 grams button mushrooms
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • 1 teaspoon fresh thyme leaves
  • 120 milliliters beef stock
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Slice the sirloin steak into thin strips, about 1/2 inch wide. Season with salt and black pepper, then set aside.

Step 2

Clean the button mushrooms with a damp paper towel and slice them into thin pieces.

Step 3

Finely mince the garlic cloves.

Step 4

Heat a large skillet over medium-high heat. Add 1 tablespoon of butter and the olive oil to the pan.

Step 5

Once the butter has melted and is slightly foamy, add the sirloin strips in a single layer. Sear for 2–3 minutes per side until browned but not fully cooked through. Remove the steak from the skillet and set aside on a plate.

Step 6

Add the remaining 1 tablespoon of butter to the skillet. Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until the mushrooms are golden and their moisture has evaporated.

Step 7

Stir in the minced garlic and fresh thyme leaves. Cook for 1 minute until fragrant.

Step 8

In a small bowl, mix the beef stock, soy sauce, cornstarch, and water until smooth. Pour this mixture into the skillet with the mushrooms.

Step 9

Scrape the bottom of the skillet with a wooden spoon to release any browned bits, and let the sauce simmer for 3–4 minutes until it begins to thicken.

Step 10

Return the seared sirloin strips to the skillet. Toss to coat the meat in the sauce and cook for an additional 2–3 minutes until the steak is heated through and the sauce is thickened.

Step 11

Adjust seasoning with additional salt and pepper if needed. Remove from heat.

Step 12

Serve hot over steamed rice, mashed potatoes, or with crusty bread.
