Ingredients

  • 12 oz spaghetti or linguine pasta
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic cloves, minced
  • 0.5 tsp red pepper flakes
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • 0.25 cup grated Parmesan cheese (optional)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, drain the pasta, and set it aside.

Step 2

While the pasta cooks, pat the shrimp dry and season with a pinch of salt and black pepper.

Step 3

In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat until the butter is melted.

Add the minced garlic and red pepper flakes to the skillet. Cook for 1-2 minutes, stirring frequently, until the garlic is fragrant but not browned.

Increase the heat to medium-high and add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

Return the cooked pasta and shrimp to the skillet. Toss everything together until the pasta is well coated in the sauce. If needed, add more reserved pasta water a little at a time to reach your desired consistency.

Stir in the chopped parsley and adjust the seasoning with additional salt and black pepper, if needed.
