Ingredients

  • 1 pound Large sea scallops
  • 8 ounces Angel hair pasta
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 4 cloves Garlic cloves, minced
  • 1 cup Dry white wine
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Freshly ground black pepper
  • 0.25 teaspoons Crushed red pepper flakes (optional)

Directions

Step 1

Pat the scallops dry with paper towels and season both sides with salt and black pepper.

Step 2

Bring a large pot of salted water to a boil, and cook the angel hair pasta according to package instructions. Reserve 1/2 cup of pasta water before draining and set the pasta aside.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add the scallops in a single layer (work in batches if necessary). Sear the scallops for 2-3 minutes per side until golden brown and cooked through. Remove the scallops and set them aside on a plate.

Step 4

Reduce the heat to medium and lower the skillet temperature slightly. Add 2 tablespoons of butter to the skillet along with the minced garlic. Cook for about 1 minute, stirring frequently, until fragrant.
