Ingredients

  • 1 lb pork tenderloin
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 0.5 cup chicken broth
  • 3 tbsp lemon juice
  • 2 tbsp heavy cream (optional)
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Trim the pork tenderloin of any excess fat or silver skin, then slice it into 1-inch thick medallions. Lightly flatten each medallion with the palm of your hand for even cooking.

Step 2

Season the medallions with salt and black pepper on both sides. Lightly dust each piece with flour, shaking off any excess.

Step 3

Heat a large skillet over medium-high heat and add olive oil. Once hot, add the pork medallions in a single layer, ensuring not to overcrowd the pan. Cook for 2-3 minutes per side, or until golden brown and just cooked through (145°F internal temperature). Remove the pork from the pan and set aside.

Step 4

Reduce the heat to medium, then add the butter to the same skillet. Once melted, add the minced garlic and sauté for about 30 seconds, until fragrant.

Step 5

Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Let the mixture simmer for 2-3 minutes to reduce slightly.

Step 6

Stir in the lemon juice and heavy cream (if using), and simmer for another 2 minutes. Taste and adjust seasoning with more salt or pepper if needed.

Step 7

Return the pork medallions to the skillet along with any accumulated juices. Spoon the lemon garlic sauce over the medallions and cook for another minute to warm through.

Step 8

Garnish with chopped fresh parsley and serve immediately. This pairs well with mashed potatoes, rice, or steamed vegetables.
