Ingredients

  • 2 large Fennel bulbs
  • 2 tablespoons Olive oil
  • 2 medium Garlic cloves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 4 sprigs Fresh thyme
  • 1 tablespoon Lemon juice
  • 0.25 cups Water or vegetable stock

Directions

Step 1

Trim the fennel bulbs by cutting off the stalks and fronds. Quarter the bulbs and remove the tough core, then slice the quarters into thin wedges.

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Mince the garlic cloves, then add them to the skillet, cooking for 1-2 minutes until fragrant.

Step 4

Add the sliced fennel to the skillet and season with salt and black pepper. Stir to coat the fennel evenly in oil and seasoning.

Step 5

Cook the fennel for 5-7 minutes, stirring occasionally, until it starts to soften and brown slightly.

Step 6

Add the fresh thyme sprigs and pour in the water or vegetable stock. Cover the skillet with a lid and let the fennel steam for another 8-10 minutes, until tender.

Step 7

Remove the lid and increase the heat slightly. Allow any remaining liquid to evaporate and sauté the fennel until caramelized, about 2-3 minutes.

Step 8

Drizzle with lemon juice before serving for a bright, fresh flavor. Adjust seasoning with additional salt or pepper, if needed.

Step 9

Serve warm as a side dish to accompany fish, chicken, or pasta.
