Ingredients

  • 2 cups Cherry tomatoes
  • 2 tablespoons Olive oil
  • 3 tablespoons Pine nuts
  • 2 cloves Garlic cloves
  • 6 leaves Fresh basil leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Wash and pat dry the cherry tomatoes. Slice them in half and set aside.

Step 2

Peel the garlic cloves and finely mince them.

Step 3

Heat a dry skillet over medium heat. Add the pine nuts and toast for 2–3 minutes, stirring frequently, until they are golden and fragrant. Remove from the skillet and set aside.

Step 4

In the same skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until aromatic, being careful not to let it burn.

Step 5

Add the halved cherry tomatoes to the skillet. Stir to coat them in the olive oil and garlic, and cook for 5–7 minutes, stirring occasionally, until they soften and begin to release their juices.

Step 6

Season the tomatoes with salt, black pepper, and red pepper flakes (if using), and stir well.

Step 7

Roughly tear the fresh basil leaves and scatter them over the cooked tomatoes. Stir gently to combine.

Step 8

Remove the skillet from the heat and sprinkle the toasted pine nuts over the top just before serving.
