Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic cloves
  • 500 grams cherry tomatoes
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes
  • 10 leaves fresh basil leaves
  • 0.5 teaspoons sugar
  • 2 tablespoons water or vegetable broth

Directions

Step 1

Peel and finely mince the garlic cloves.

Step 2

Wash the cherry tomatoes and slice them in half.

Step 3

Heat the olive oil in a large skillet over medium heat.

Step 4

Add the minced garlic to the skillet and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 5

Add the halved cherry tomatoes to the skillet and stir to coat them in the oil and garlic.

Step 6

Season the tomatoes with salt, black pepper, red pepper flakes, and sugar. Stir well.

Step 7

Let the tomatoes cook for 10-12 minutes, stirring occasionally, until they begin to break down and release their juices. Use the back of a spoon to gently mash some of the tomatoes for a chunkier sauce.

Step 8

If the sauce begins to dry out, add 1-2 tablespoons of water or vegetable broth to maintain the desired consistency.

Step 9

Tear the basil leaves into smaller pieces and stir them into the sauce during the last minute of cooking.

Step 10

Taste and adjust seasoning as needed.

Step 11

Serve the sauce immediately over pasta, as a dip, or as a topping for your favorite dishes.
