Ingredients

  • 1 bunch (about 1 pound) broccoli rabe
  • 3 tablespoons extra virgin olive oil
  • 3 garlic cloves, thinly sliced
  • 1 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper (freshly cracked)
  • 1 tablespoon lemon juice (optional, for serving)

Directions

Step 1

Trim the ends off the broccoli rabe stems and remove any tough or discolored leaves. Rinse the broccoli rabe thoroughly under cold water and set aside.

Step 2

Bring a large pot of salted water to a boil. Blanch the broccoli rabe by adding it to the boiling water and cooking for 2 minutes. Immediately transfer it to a bowl of ice water to stop the cooking process. Drain and pat dry with paper towels.

Step 3

In a large skillet, heat the olive oil over medium heat.

Step 4

Add the sliced garlic to the skillet and cook, stirring frequently, for 1-2 minutes or until fragrant and just beginning to turn golden (be careful not to burn the garlic).

Step 5

Add the red pepper flakes and stir briefly to distribute the flavor.

Step 6

Add the blanched broccoli rabe to the skillet, season with salt and black pepper, and toss to combine. Cook for 3-5 minutes, stirring occasionally, until the broccoli rabe is tender and coated in the garlic and olive oil mixture.

Step 7

Taste and adjust seasoning if necessary. If desired, drizzle with lemon juice before serving for a bright, fresh finish.

Step 8

Serve warm as a side dish or as part of a larger meal.
