Ingredients

  • 1 bunch beet tops (greens and stems)
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic cloves, minced
  • 0.25 teaspoons red pepper flakes (optional)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Thoroughly rinse the beet tops under cold water to remove any dirt or grit. Pat them dry with a clean kitchen towel or paper towel.

Step 2

Separate the stems from the greens. Chop the stems into 1-inch pieces and roughly chop the greens. Set aside.

Step 3

Heat the olive oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for 30 seconds, stirring constantly, until fragrant but not browned.

If using, add the red pepper flakes and cook for another 15 seconds to infuse the oil with heat.
