Ingredients

  • 500 g green beans
  • 200 g pearl onions
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cups water
  • 2 tbsp parsley

Directions

Step 1

Bring 2 cups of water to a boil in a medium saucepan.

Step 2

Trim the ends of the green beans and rinse them thoroughly under cold water.

Step 3

Blanch the green beans in the boiling water for 2-3 minutes or until they turn bright green. Drain and immediately transfer them to a bowl of ice water to stop cooking. Drain again and set aside.

Step 4

Peel the pearl onions by blanching them in boiling water for 1 minute, then transferring them to ice water. Pinch the root end to easily remove the skins.

Step 5

Mince the garlic cloves and finely chop the parsley. Set aside.

Heat the olive oil and butter in a large skillet over medium heat.

Add the peeled pearl onions to the skillet and sauté for 8-10 minutes, stirring occasionally, until they are golden brown and caramelized.

Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
