Ingredients

  • 1 Apple (medium, preferably Fuji or Honeycrisp)
  • 2 tablespoons Butter
  • 1 tablespoon Brown sugar
  • 0.5 teaspoons Ground cinnamon
  • 3 Eggs
  • 2 tablespoons Milk
  • 0.25 teaspoons Salt
  • 0.5 teaspoons Vanilla extract
  • 1 tablespoon Maple syrup (optional, for drizzling)

Directions

Step 1

Peel the apple, core it, and slice it thinly.

Step 2

In a small skillet over medium heat, melt 1 tablespoon of butter.

Step 3

Add the apple slices, brown sugar, and ground cinnamon to the skillet. Sauté for 4-5 minutes, stirring occasionally, until the apples are soft and lightly caramelized. Remove from heat and set aside.

Step 4

In a bowl, whisk together the eggs, milk, salt, and vanilla extract until the mixture is smooth and pale yellow in color.

Step 5

In a nonstick skillet over medium-low heat, melt the remaining 1 tablespoon of butter, making sure to coat the entire pan.

Step 6

Pour the egg mixture into the skillet and let it cook undisturbed for 1-2 minutes, or until the edges begin to set.

Step 7

Using a spatula, gently lift the edges of the omelet and tilt the pan slightly to allow any uncooked egg to flow to the edges.

Step 8

Once the omelet is mostly set but still slightly soft on top, spread the sautéed apples over one half of the omelet.

Step 9

Carefully fold the other half of the omelet over the apple filling. Let it cook for another 1-2 minutes to ensure it is fully set.

Step 10

Slide the omelet onto a plate and drizzle with maple syrup, if desired. Serve immediately and enjoy!
