Peel, core, and slice the apples into thin wedges. Slice the onion thinly. Cut the bacon into small bite-sized pieces.
Heat a large skillet over medium heat and add the bacon. Cook, stirring occasionally, until crispy and browned, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the rendered fat in the pan.
