Ingredients

  • 6 links Italian sausage (mild or hot)
  • 2 large Red bell peppers
  • 2 large Green bell peppers
  • 2 large Yellow onion
  • 2 tablespoons Olive oil
  • 3 medium Garlic cloves
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Dried oregano
  • 0.5 teaspoons Crushed red pepper flakes (optional)
  • 1 cup Beer (lager or pale ale)
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 6 pieces Hoagie rolls (optional, if serving as sandwiches)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet or sauté pan over medium heat. Add the sausage links and cook them until browned on all sides, about 6-8 minutes. Remove the sausages from the pan and set aside.

Step 2

While the sausages are cooking, core and slice the red and green bell peppers into thin strips. Peel and slice the onions into rings. Mince the garlic cloves.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced peppers and onions. Cook over medium heat, stirring frequently, until they soften and begin to caramelize, about 8-10 minutes.
