  • 4 oz Italian sausage
  • 1 tbsp Olive oil
  • 2 Garlic cloves

  • 1 Carrot
  • 1 Celery stalk
  • 3 cups Chicken broth
  • 1 cup Diced tomatoes (canned, with juices)
  • 6 oz Cheese tortellini (fresh or frozen)
  • 1 cup Baby spinach
  • 1 tsp Dried Italian seasoning
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Grated Parmesan cheese (optional, for serving)

Directions

Step 1

Peel and finely dice the onion, the carrot, and the celery stalk. Mince the garlic cloves and set everything aside.

Step 2

Heat the olive oil in a medium-sized pot over medium heat. Remove the casing from the Italian sausage and add it to the pot, breaking it into small chunks. Cook until browned, about 5-7 minutes.

Add the diced onion, carrot, celery, and minced garlic to the pot. Sauté for 4-5 minutes, or until the vegetables are softened and fragrant.
