Ingredients

  • 16 pieces Large button or cremini mushrooms
  • 2 tablespoons Olive oil
  • 8 ounces Italian sausage, removed from casing
  • 0.5 cups Breadcrumbs
  • 0.5 cups Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 cups Crushed tomatoes
  • 1 tablespoons Tomato paste
  • 1 teaspoons Dried oregano
  • 0.25 teaspoons Red chili flakes (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the mushrooms by gently wiping them with a damp paper towel. Remove the stems and set them aside for later use.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook, breaking it apart with a spatula, until browned and fully cooked, about 5-6 minutes. Remove from heat and let cool slightly.

Step 4

Finely chop the reserved mushroom stems. In the same skillet, add 1 tablespoon of olive oil and sauté the chopped mushroom stems and garlic until softened, about 3-4 minutes.

In a mixing bowl, combine the cooked sausage, sautéed mushroom stems, breadcrumbs, Parmesan cheese, parsley, salt, and black pepper. Mix until well incorporated.

Stuff each mushroom cap generously with the sausage mixture, pressing it down gently to ensure it stays in place.

In the same skillet (no need to clean), add the crushed tomatoes, tomato paste, oregano, and chili flakes (if using). Stir to combine and cook over medium heat for 5 minutes to allow the flavors to meld.

Spread a thin layer of the tomato ragu in the bottom of a baking dish. Arrange the stuffed mushrooms on top of the sauce.

Spoon a dollop of the remaining tomato ragu over each stuffed mushroom.

Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the mushrooms are tender and the filling is golden brown on top.

Step 11

Remove from the oven and let cool slightly before serving. Garnish with extra chopped parsley or grated Parmesan if desired.
