  • 4 large Russet potatoes
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 pound Mild Italian sausage
  • 1 small, finely diced Onion
  • 2 cloves, minced Garlic
  • 2 tablespoons Butter
  • 0.5 cup Sour cream
  • 1 cup, shredded Cheddar cheese
  • 2 tablespoons, chopped Chives
  • 0.25 teaspoon Paprika

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the potatoes thoroughly and pat them dry with a kitchen towel.

Step 3

Rub each potato with olive oil and sprinkle with a pinch of salt. Place the potatoes on a baking sheet and bake in the oven for 50-60 minutes, or until they are tender when pierced with a fork.

Step 4

While the potatoes are baking, prepare the sausage filling. Heat a skillet over medium heat and cook the sausage, breaking it into small pieces, until browned and fully cooked. Remove the sausage from the skillet and set aside.

Step 5

In the same skillet, add the diced onion and cook for 3-4 minutes, or until softened. Add the minced garlic and cook for an additional 1 minute until fragrant. Remove from heat.

When the potatoes are done baking, let them cool slightly so they can be handled safely. Cut a lengthwise slit along the top of each potato, being careful not to cut all the way through, and gently scoop out most of the potato flesh into a mixing bowl, leaving the skins intact.

To the bowl with the potato flesh, add butter, sour cream, half of the shredded cheddar cheese, and the cooked sausage mixture. Mash and mix until well combined and creamy. Season with salt, black pepper, and paprika to taste.

Spoon the filling mixture back into the potato skins, mounding it generously on top.

Sprinkle the remaining cheddar cheese evenly over the stuffed potatoes.

Step 10

Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the filling is heated through and the cheese is melted and bubbly.

Step 11

Remove from the oven and garnish with chopped chives. Serve warm and enjoy!
