Ingredients

  • 16 large caps Cremini mushrooms
  • 0.5 pound Italian sausage (sweet or spicy, casings removed)
  • 4 ounces Cream cheese (softened)
  • 2 tablespoons Fresh parsley (chopped)
  • 2 stalks Scallions (finely chopped, green parts only)
  • 0.25 cup Parmesan cheese (freshly grated)
  • 0.25 cup Panko breadcrumbs
  • 2 cloves Garlic (minced)
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the cremini mushrooms by wiping them with a damp paper towel. Carefully remove the stems and reserve them. Arrange the mushroom caps, cavity side up, on a baking sheet.

Finely chop the reserved mushroom stems and set aside.

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook, breaking it up into small pieces with a wooden spoon, until fully browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set it aside on a plate.
