Ingredients

  • 16 pieces large white button mushrooms
  • 2 tablespoons olive oil
  • 8 ounces Italian sausage (casings removed)
  • 2 pieces garlic cloves (minced)
  • 4 ounces cream cheese (softened)
  • 1 cup grated Parmesan cheese
  • 1 cup Italian breadcrumbs
  • 2 tablespoons fresh parsley (chopped)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 spray cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.

Step 2

Clean the mushrooms by wiping them gently with a damp towel. Remove the stems and set aside, creating a hollow cavity in each mushroom cap.

Step 3

Finely chop the removed mushroom stems and set them aside for use in the filling.

Step 4

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sausage and cook, breaking it into small pieces with a spoon, until no longer pink. Remove from the skillet and set aside.
