Wash and scrub the potatoes thoroughly, then dry them with a clean towel.
Rub the potatoes with olive oil and sprinkle them lightly with salt. Pierce each potato a few times with a fork to allow steam to escape.
Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until the potatoes are tender when pierced with a knife.

Spoon the sausage and potato mixture back into the potato shells, mounding it on top.
Place the stuffed potatoes on a baking sheet and sprinkle the reserved cheese over the top.
Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Remove from the oven and garnish with the remaining green onions. Serve hot and enjoy!
