  • 6 slices Bacon
  • 12 oz Smoked sausage
  • 1 tbsp Olive oil

  • 1.5 cups Long-grain white rice
  • 2.5 cups Chicken broth
  • 1 15-oz can Diced tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 tsp (adjust to taste) Salt
  • 0.5 tsp Black pepper
  • 2 tbsp, chopped (optional) Fresh parsley or cilantro

Directions

Step 1

Heat a large, deep skillet or Dutch oven over medium heat.

Cook the bacon slices until crispy, then remove them from the skillet and place on a paper towel-lined plate. Reserve about 2 tablespoons of the bacon drippings in the pan.

Slice the smoked sausage into rounds and add to the pan with the bacon drippings. Cook for 3–4 minutes on each side until browned, then remove and set aside.
