Ingredients

  • 4 links sausages (any variety, such as Italian or smoked sausage)
  • 3 cups baby potatoes, halved or quartered

  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 cup chicken or vegetable broth
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the sausage links to the skillet and cook for 6-8 minutes, turning occasionally, until browned on all sides. Remove from the skillet and set aside. (They do not need to be fully cooked at this stage.)

Step 3

In the same skillet, add the remaining olive oil. Toss in the baby potatoes and cook for 5-6 minutes, stirring occasionally, until they start to brown.

Add the sliced onions, bell peppers, and zucchini to the skillet. Cook for another 5 minutes, stirring frequently, until the vegetables begin to soften.

Pour the chicken or vegetable broth into the skillet and scrape the bottom of the pan to deglaze. Bring the mixture to a simmer.
