Ingredients

  • 4 links Italian sausage (mild or spicy)
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves (minced)
  • 1 medium Yellow onion (sliced thinly)
  • 0.5 cup White wine
  • 14 ounces Crushed tomatoes
  • 0.5 cup Chicken broth
  • 1 tablespoon Capers (optional)
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0 Cooked pasta or crusty bread (for serving)

Directions

Step 1

Slice the sausage links into thin rounds, about 1/4 inch thick.

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Add the sliced sausage to the skillet and cook until browned on both sides, about 5 minutes. Remove the sausage from the skillet and set aside.

Step 4

In the same skillet, add the minced garlic and sliced onion. Sauté until the onion becomes translucent, about 3-4 minutes.

Step 5

Deglaze the skillet by pouring in the white wine, scraping up any browned bits on the bottom of the pan. Let the wine reduce by half, about 2 minutes.

Step 6

Stir in the crushed tomatoes and chicken broth, mixing well to combine.

Step 7

Return the browned sausage to the skillet, then stir in the capers (if using), salt, and black pepper.

Step 8

Reduce the heat to low, cover, and let the mixture simmer for 15-20 minutes to allow the flavors to meld.

Step 9

Sprinkle the chopped parsley over the top before serving.

Step 10

Serve hot over cooked pasta or with a side of crusty bread.
